1x lamb oxo cube
1x beef oxo cube
Trim fat from meat and thin slice all meat and vegetables.
Scramble eggs lightly, leave to one side while heating oil and stir frying onions to lightly caramalise. Add meat and brown, then add the carrot, peas and mushrooms. Add water and stock cubes, allow to heat, then add the rice, keep on high heat while rice is coated, then reduce heat to simmer. As water is absorbed, stir in the scrambled eggs and serve when rice is ready. Makes enough for four, or two hungry people
